Mediterranean With a Twist

I’ve been cooking since I can remember. Both my parents have had a huge part to play in encouraging me to cook, and using recipes has never really been something that I’ve done - rather taking inspiration from recipes and pictures and then working it out myself (apart from baking of course!). My mother is Romanian and there’s a lot of her influence in my cooking, but my father has Jewish heritage, so he’s all about schnitzels and strudels. Travelling to Japan and China, massively shaped my culinary outlook even now. I’m a Registered Nutritionist, which has elevated my cooking over the past few years. There’s a movement in Nutrition currently advising people to eat 30 different plants in a week. My unique supper club aims to provide all of those plants in one meal - A 30 Plants Supper Club.

  • Roasted Carrots with Whipped Feta - sesame and zaatar roasted carrots on a bed of garlicky whipped feta cheese, served drizzled with fermented chilli honey [dairy, sesame]

    Chicken or Vegetable Ciorba (Sour Soup) - Romanian probiotic-rich sour soup, made either with chicken, or can be vegan. Contains a huge amount of vegetables and lovage. Wheat, gluten [can be made without]

    Wild Mushrooms with Jerusalem Artichoke Mash - seasonal wild mushrooms with green garlic on a bed of Jerusalem artichoke - great for the gut - full of prebiotic fibre to ease digestion - served with a nasturtium and walnut pesto. [walnuts]

  • Grilled Tiger Prawn with Spelt and Zacuscǎ - simply grilled tiger prawn with garlic oil sitting on a bed of zacuscǎ - a Romanian dip made with smoky aubergine and red pepper, al dente wholegrain spelt, cavolo nero and finished off with a seafood reduction [seafood, aubergine, gluten]

    Mains

  • Tiramigiù - my take on a tiramisù made with lavender and rosemary, in place of coffee. Tiramisu means “pick me up” in Italian, whereas tiramigiu means “pull me down” - a reference to the soporific effect of lavender infused into the savoiardi biscuit base. Served with rosemary mascarpone cream and a zingy citrus and berry couli. [dairy, gluten (can be made without)]
